Ingredients

1 kg green tomatoes
3 small to medium red onions
2 handfuls of sultanas
cider vinegar (to taste)
juice of 2 lemons
a fruit of choice (apple/pear)
3 to 4 garlic gloves (more or less if you want.)
4 tbsp cooking oil
sugar (to taste)
salt (to taste)
pepper (to taste)
1 tbsp ground ginger
1 tbsp ground coriander
1 tbsp ground cumin
1 tsp* ground cardomom

Method

put 3tbsp oil in a pan
put green tomatoes in pan (don't have to be purely green)
put pan on high heat occasionaly stirring until bubbling
add spices
add garlic thinly sliced
chop fruit into small pieces - put in pan
chop one onion finely and put in pan
turn down the heat to a gentle simmer
small frying pan with 1tbsp oil
chop two onions coarsely and add to frying pan on a high heat
stir onions regularly till caramelised
add onions to main pan (gentle simmer)
add lemon juice
add sugar, vinegar and salt in stages tasting regularly until its satisfactory
keep stirring occasionally for another 30 minutes (or longer)

often its better matured so leaving it overnight and simmering again before jarring it is good.
